Ember is a wood-fired pizza kitchen. We build fires from oak and maple, let the oven reach a proper heat, and slide in dough that's been cold-proofing since the day before. What comes out has a blistered crust, a charred bottom, and a flavour that only real fire can produce. That's all we do — and it's enough.
