Milano → Montreal, 1985

"There was no plan. Just a wood oven, a handful of recipes, and a city he didn't yet know."

In the summer of 1985, Giuseppe Amato arrived in Montreal from a small town outside Milan with two suitcases and a recipe for dough he'd been making since he was twelve years old. He had no restaurant experience — not really. He'd grown up watching his grandmother work a wood-fired oven in a stone courtyard, and he'd decided somewhere along the way that this was the only kind of pizza worth making.

He found a narrow space on a side street, bought a secondhand oven, and spent three weeks learning how to build a proper fire in a Quebec winter. Ember opened quietly in October 1985. There were eight tables. The menu had four pizzas. By the following spring, there was a line out the door.

The recipes haven't changed much. The dough still cold-proofs for at least 24 hours. The sauce is still San Marzano. The oven still burns oak and maple — the same two woods Giuseppe chose because they reminded him of home. What's changed is everything around it: the neighbourhood, the faces, the city. But the pizza is the same pizza.

Giuseppe still comes in on Thursdays. He doesn't cook anymore — mostly — but he'll tell you if the crust isn't right.
